Sandwiches. Who doesn’t love a great sandwich?? I guess it kind of makes sense that I would love sandwiches considering Vietnamese Banh Mi is so popular. If you’ve lived in the West Coast, I’m sure you’re familiar with Lee’s Sandwiches which is an international Vietnamese sandwich chain. But the key to Vietnamese sandwiches isn’t just the great sausage (gio lua) or the pickled vegetables – it’s the bread. Even if you’re afraid of or just not interested in trying a Vietnamese sandwich, I highly recommend Lee’s french baguettes which are made fresh daily.
But the main point here is that sandwiches – whether made with french baguette, toast or ciabatta – are oh-so-satisfying. Some might prefer a classic peanut butter and jelly or maybe a classic grilled cheese (made with Kraft singles of course). Or if you’re English, you might love a good ol’ cheese and onion or egg and watercress. No matter where you’re from it seems everyone has a favorite! GIO LUA (VIETNAMESE PORK SAUSAGE)
- Vietnamese pork sausage, thinly sliced
- Cilantro/coriander
- Mayo
- Black pepper
- Maggi sauce or light soy sauce
- Toast or french baguette
NOTE – this sandwich is REALLY good with a ready-made rotisserie chicken from any store. Just shred by hand and use the exact same ingredients as above. Perfect for picnics!

ROASTED TURKEY, CREAM CHEESE, SPROUTS
- Honey whole wheat bread instead of white, lightly toasted
- Reduced fat chive cream cheese
- Red onion, thinly sliced
- Cucumber, thinly sliced
- Low-sodium roasted turkey deli meat
- Spinach
- Cherry tomatoes, sliced in half
- Alfalfa sprouts

MY CROQUE-MONSIEUR (aka HAM & CHEESE)
- Regular ol’ sandwich bread
- Dijon mustard, would have preferred whole grain but didn’t have any around (on both sides of bread)
- Mayo, but very very little (both sides of bread)
- Red onions, very thinly sliced
- Deli ham
- Spinach
- Gruyere cheese
- Little butter on the outside of the bread to brown it!
- Note – I just used a frying pan to toast my little sandwich
