Growing up in California, studying in Spain and Venezuela, having Colombian friends and currently in Arizona, you can imagine why there is a lot of Latin influence in the food I eat. Of course, they also use a lot of cilantro too! I just love the simplicity and combination of flavors. The cumin, the beans, the various forms of pork and salsa. You can have a heavy satisfying bandeja paisa (Colombian), a creamy ham and cheese croqueta, or a refreshing mango salsa. The possibilities are endless… By no means am I an expert on Latin food and flavors, but I will try to share the simple and tasty recipes I’ve come across or developed over the years. I hope all my Latin friends will be proud!
